Recipe: Salted Caramel Chocolate Shortbread Bars



One of my favorite things to do (other than pho­tog­ra­phy!) is to cook.  I espe­cially love to bake and around this time each year I start think­ing about what will be on my hol­i­day cookie plat­ter.  I saw this recipe on one of my favorite cook­ing blogs, Annie’s Eats, and imme­di­ately knew I had to make them for sev­eral rea­sons.  First, I like any­thing with choco­late.  Sec­ond, I typ­i­cally like any type of bar cookie.  Third, I will make any­thing that has the words “salted caramel” in the recipe title.  I just like to say “salted caramel.  It brings to mind all types of gooey ymmi­ness.  These bars are def­i­nitely yummy.  They remind me of an upscale Twix bar.

They are fairly easy to make other than I had a slight prob­lem with the caramel fill­ing.  My heat was turned up too high and the caramel at the bot­tom of the pan started to brown too quickly which put a few brown flecks through­out my caramel.  It did not affect the taste though and I couldn’t leave these bars alone…neither could my hus­band Tom. We finally had to pack­age some up and give them away or we would have con­sumed the entire pan. These def­i­nitely will be mak­ing an appear­ance on my cookie plat­ter this year!
