Recipe: Salted Caramel Chocolate Shortbread Bars

One of my favorite things to do (other than photography!) is to cook. I especially love to bake and around this time each year I start thinking about what will be on my holiday cookie platter. I saw this recipe on one of my favorite cooking blogs, Annie’s Eats, and immediately knew I had to make them for several reasons. First, I like anything with chocolate. Second, I typically like any type of bar cookie. Third, I will make anything that has the words “salted caramel” in the recipe title. I just like to say “salted caramel. It brings to mind all types of gooey ymminess. These bars are definitely yummy. They remind me of an upscale Twix bar.
They are fairly easy to make other than I had a slight problem with the caramel filling. My heat was turned up too high and the caramel at the bottom of the pan started to brown too quickly which put a few brown flecks throughout my caramel. It did not affect the taste though and I couldn’t leave these bars alone…neither could my husband Tom. We finally had to package some up and give them away or we would have consumed the entire pan. These definitely will be making an appearance on my cookie platter this year!
